Just wanted to say hello. Hi!

Den. Moderate Dairy Allergy, with many other contact allergies. I get excema on my hand and IBS-like symptoms when I consume milk/dairy products. Soy and eggs seem to be ok. After attempting to manage my eczema and only reaching a certainly point with it (avoiding known contact irritants), I went DF one day and the eczema began to clear up and my IBS symptoms are nearly non-existent. (go figure! *g*) I feel SO much better, but am just so anxious for my eczema to continue to clear up. It isn't helping that I also recently had a wretched reaction to homemade Goat's Milk Soap, so I'm waiting on that to clear up as well. (I'm in the itchy as it heals stage, which I think is nearly as bad as the itchy from a break out stage)

Patience has never been a strong suit of mine. ;-)

I did have a question though. We camp a LOT in the summer time and we usually eat pot luck style with the other campers. Obviously that won't be an option for me, so what are some easily portable DF food items I can take with me? (We do have a camper, so space/refrigeration is not an issue)

Nut butters. You can make your own, and flavor and sweeten them, yum. You may have to lock them up to prevent pilferage.

Maybe, ask yourself, what are our favorite camping foods, and how can I tweak these so that everybody can eat them? You can eat separate food for some situations, but for more "together" eating, you can test out some tweaked (or even some new!)entrees, desserts, etc., ahead of time.

I plan to modify cookies, brownies, make my own "safe" bread, and muffins. And I'll have to lock those as well. ;-)

Tell me more about nut butters?

http://www.epicurious.com/recipes/food/views/Nut-Butter-395870 Any nut (or seed), any liquid sweetener (honey, maple syrup, golden syrup, agave syrup, etc. etc.) A little salt, a little more mild oil to get things going in the blender.

Give yourself a little budget and go to the health food aisle or store, if you have one. Try the following:
Halva, a sesame butter (tahini) in a firm bar.

Caution caution! All of these are HIGH CALORIE.
